The Gorge is the deep ravine where the Milkwater plunges down just before it empties into the Bay of Ice, so deep that the builders of the Wall gave up extending it all the way to the coast and left the ravine itself as the natural boundary instead.
Wildlings looking to slip past the Night's Watch try to descend into its dark depths, and at the crossing known as Skull Bridge some of the clashes between the Free Folk and the black brothers have taken place.

Geography
The Gorge opens west of the Shadow Tower, with the slopes of the Frostfangs rising to the northwest. It runs so deep that it counts as a natural defense on its own, deep enough that the Wall simply stops there instead of continuing on to the Bay of Ice, where the Milkwater flows out.
Within the ravine, close to the Wall itself, there is a crossing called Skull Bridge. It is there that wildlings climb down into the depths trying to slip past the black brothers' watch; the Night's Watch patrols the area, but cannot fully stop small bands from getting through.
